As I am on an all organic diet, it is absolutely vital that I am getting all the nutrients I need! This Parfait is a tasty-classy way to enjoy eating healthy.
Today in Atlanta it feels like summer outside at 85 degrees! Come Spring, Come! What day could be better than to introduce some island flavors into our lives…
It is a power meal full of antioxidants and can be made ahead of time, placed in the fridge, then quickly taken to-go as you rush out the door ☀️.
Mornings are typically super hectic for me (and I’m sure for at least one or two of you) so this is an added bonus to the health crave journey. And it’s Guilt Free!
We’re going to add layer by layer of organic goodness, starting from the bottom up.
First, layer a spoonful of blueberries (to save money I oftentimes buy my fruit for smoothies and parfaits frozen; this is a great all natural/organic tip in general).
Then add your baobab coconut granola. I got this recipe from one of my island sisters so it’s bound to be full of sunshine and sweet fun! And it Must include Coconut. You can’t enjoy the islands without a hint of coconut.
Next, you are going to add your organic vanilla yogurt. Get a good layer of this so that when you go to eat it, you are able to mix all the sweet fruit and granola into it, trust me you won’t regret it!
After you get a few spoonfuls of your yogurt, add another layer of baobab coconut granola extravagance.
And top it off with more Island-Berry Joy: a mixture of strawberries, mangos, and pineapples adorned with sweet, organic blueberries!
And here’s a quick recipe you can always refer back to (until you memorize it):
- Organic Blueberries
- Baobab Coconut Granola
- Organic Vanilla Yogurt
- Mango, Strawberry, Pineapple Fruit
- Organic Blueberries
- Did I say organic enough? lol
- Add a Layer of Blueberries to the bottom of your cup (I like to use a mason jar)
- Then add a layer of Baobab Coconut Granola
- Add a few spoonfuls of organic vanilla yogurt (use a heavy hand)
- Layer another spoonful of baobab coconut granola
- Mix together mango slices, strawberries and pineapple slices
- Layer your fruit mixture at top of cup
- Sprinkle on a few organic blueberries to garnish your parfait
Now, what are the benefits of this outside of it Almost being like a breakfast dessert? At least, I can imagine this to be true after having eliminated most sugar out of the picture!

When you combine this with the superfood coconut, you can’t lose. Coconut can help slow down your metabolism promoting weight loss, and also helps your heart preventing stroke, aids with digestion, provides energy and is an antibacterial supporting your immune system.
It also provides the brain glucose, which is damaged during Alzheimer’s Disease and can “possibly help prevent the onset of neurological diseases.” (Superhuman coach.com)
It is also a healthy way to obtain good fats for your body (there are a few of us out there that need to gain, not lose weight.) Not all fats are bad and being underweight is just as unhealthy as being obese.

Berries also help your mental health and cognitant strength as you age, are a sweet way to balance diabetes, may prevent Parkinson’s disease, could promote heart health, and fight/prevent cancer (specifically blueberries and raspberries). A diet high in fruits and vegetables helps prevent cancer.
Food has been given and used as a medicine for many years by various cultures across the world. I’ve seen food and vitamin supplementation do wonders in my health, with no side effects!
So eat up and enjoy it! Maybe this is how we were always meant to eat and we are now learning all the amazing reasons as to why!
