Healthy Open Faced Breakfast Biscuit

Every morning I eat some type of eggs for breakfast but have run out of ways to make them after a while.  It really takes a lot of creativity to keep getting enough protein in our bodies as ladies.  I used to love boiled eggs, simply sliced in half, with salt, pepper and dipped in maple syrup.  Try it!  It’s pretty tasty…

But after about a week of eating boiled eggs every day you may not want to see another boiled egg.  Eggs are a healthy source of protein.  Protein helps our bodies have a stronger immune system, build and repair cells, move nutrients and develop hormones.

Really healthy or “complete” proteins are in eggs, fish, dairy, meats and poultry.  The protein found in eggs are also lower in carbohydrates.

I always get free range or organic eggs to avoid the chemicals found in animals who are squeezed together in unhealthy conditions or fed antibiotics that seep into our systems when we eat.  This same “rule” can be used when getting chicken, beef or any other type of meat (look for free range, organic meats, it will say it on the package.)

Now that all of that health stuff is covered, I wanted to share a recipe that my friend Laurin has created.

She’s one of the classiest women I know, a great teacher and a great cook!

Ok, one more health fact: Whole wheat and whole grains are really good for you!  Did you know that there are other whole grain alternatives as well like brown rice, millet, spelt, quinoa, buckwheat and spelt?  I cook with them all of the time and will share recipes that can get you started eating more whole grains. 

They are packed with nutrients like Vitamin B (really good for women of childbearing age, good for women who want to get pregnant and have a healthy pregnancy one day), Antioxidants (protect cells, protect and repair tissue), and fiber (cleanses the colon, helps with digestion). 

Here are a few organic or all natural brands you can begin to experiment with (I’ll add more fun, simple recipes soon):

And if none of that really makes you want to eat whole grains, guess what else?  They help you lose weight!  They don’t stick to you like regular old flour! 

According to the American Journal of Clinical Nutrition, people who ate mainly whole grains were 49% less likely to gain weight whereas people eating refined grains were more likely to put on the pounds.  This is a way to enjoy those “breads” and stay nice and fit!

You can replace your pancakes, biscuits, bread, muffins, cereal, soups, stews and pasta with whole grain options that are less “weighty.”

Here’s a quick and simple way to make a whole grain, fried egg sandwich that you can take with you on the run (skipping the fast food temptation we often crave lol).  No more excuses ladies let’s get in shape!

A scrumptious whole wheat breakfast delight you can grab as you run out the door or enjoy in the mornings during a quick quiet time!

  1. 2 cups organic whole wheat flour
  2. 4 teaspoons baking powder
  3. ½ teaspoon salt
  4. 4 tablespoons cold organic butter
  5. 1 cup milk (I used almond milk but you can use any kind)
  6. 2 eggs
  7. 1-2 organic turkey slices
  8. Green bell pepper
  9. Red bell pepper
  10. 1/2 tbsp butter
  11. Garlic salt (to taste)
  12. Black pepper (to taste)
  1. Instructions: (Biscuits)
  2. In a medium sized bowl combine flour, baking powder, and salt. Mix well with a fork.
  3. Cut the butter into little pea sized pieces and then mix the pieces into the flour mixture.
  4. Cut in butter to the flour until it resembles coarse crumbs. You may use a fork to mash the butter into the flour.It may resemble pea-sized butter pieces covered in flour.
  5. Then pour in the milk and mix it all together. Knead the dough with your hands 8 to 10 times and then turn out onto a lightly floured counter or cutting board.
  6. Pat it out flat with your hands until the dough is a somewhat even ¾-inch thickness (or you may roll it out with a rolling pin).
  7. Using a cookie cutter or turning a drinking glass upside down, cut out biscuit rounds.
  8. Place them on an ungreased cookie sheet and bake at 450 degrees for 10 – 12 minutes or until lightly browned.
  9. Instructions: (Fried Eggs)
  10. While biscuits are baking, warm a medium skillet with about 1/2 tsp butter. Once butter has melted, crack eggs directly onto skillet (keeping yoke in tack).
  11. Add garlic salt to taste. Cook to desired firmness.
  12. Biscuits should be just about done by this time. In the meantime, slice several slivers of both the green and red peppers. If desired, warm turkey slices on skillet.
  13. Once the biscuits are complete, slice one in half. Place slice of turkey on each. Then top each with fried egg.
  14. To complete, garnish eggs with peppers and black pepper.
  15. Enjoy!

The Ultimate Organic Island Parfait

As I am on an all organic diet, it is absolutely vital that I am getting all the nutrients I need!  This Parfait is a tasty-classy way to enjoy eating healthy.

Today in Atlanta it feels like summer outside at 85 degrees! Come Spring, Come! What day could be better than to introduce some island flavors into our lives…

It is a power meal full of antioxidants and can be made ahead of time, placed in the fridge, then quickly taken to-go as you rush out the door ☀️.

Mornings are typically super hectic for me (and I’m sure for at least one or two of you) so this is an added bonus to the health crave journey.  And it’s Guilt Free!

We’re going to add layer by layer of organic goodness, starting from the bottom up.

Don’t forget you can buy your fruit frozen to save beau coup money!

First, layer a spoonful of blueberries (to save money I oftentimes buy my fruit for smoothies and parfaits frozen; this is a great all natural/organic tip in general).

This is the version we use to make our parfaits :-)

Then add your baobab coconut granola.  I got this recipe from one of my island sisters so it’s bound to be full of sunshine and sweet fun!  And it Must include Coconut.  You can’t enjoy the islands without a hint of coconut.

Next, you are going to add your organic vanilla yogurt.  Get a good layer of this so that when you go to eat it, you are able to mix all the sweet fruit and granola into it, trust me you won’t regret it!

After you get a few spoonfuls of your yogurt, add another layer of baobab coconut granola extravagance.

And top it off with more Island-Berry Joy: a mixture of strawberries, mangos, and pineapples adorned with sweet, organic blueberries!

From the Bottom up
  1. Add a Layer of Blueberries to the bottom of your cup (I like to use a mason jar)
  2. Then add a layer of Baobab Coconut Granola
  3. Add a few spoonfuls of organic vanilla yogurt (use a heavy hand)
  4. Layer another spoonful of baobab coconut granola
  5. Mix together mango slices, strawberries and pineapple slices
  6. Layer your fruit mixture at top of cup
  7. Sprinkle on a few organic blueberries to garnish your parfait
  8. Enjoy!

Now, what are the benefits of this outside of it Almost being like a breakfast dessert?  At least, I can imagine this to be true after having eliminated most sugar out of the picture!

When you combine this with the superfood coconut, you can’t lose.  Coconut can help slow down your metabolism promoting weight loss, and also helps your heart preventing stroke, aids with digestion, provides energy and is an antibacterial supporting your immune system.

It also provides the brain glucose, which is damaged during Alzheimer’s Disease and can “possibly help prevent  the onset of neurological diseases.” (Superhuman coach.com)

It is also a healthy way to obtain good fats for your body (there are a few of us out there that need to gain, not lose weight.)  Not all fats are bad and being underweight is just as unhealthy as being obese.

Berries also help your mental health and cognitant strength as you age, are a sweet way to balance diabetes, may prevent Parkinson’s disease, could promote heart health, and fight/prevent cancer (specifically blueberries and raspberries).  A diet high in fruits and vegetables helps prevent cancer.

Food has been given and used as a medicine for many years by various cultures across the world.  I’ve seen food and vitamin supplementation do wonders in my health, with no side effects!  

So eat up and enjoy it!  Maybe this is how we were always meant to eat and we are now learning all the amazing reasons as to why!

Blueberry Surprise Smoothie

I was so pleased to have created a beautiful and tasty blueberry surprise smoothie as I’m on my journey to optimal health!  This was created as I’ve been attempting to partake in the power food, Maca, on a daily basis.  Maca is an energy food originally found in the Andes Mountains of Peru but are now available in health food and natural stores in a powder form.

Maca is believed to optimize hormonal balance in women and aid in sperm health in men.  I purchased this Power Maca packet and then blended it into this blueberry sweetness to create a wonderful daily smoothie (more recipes to come soon).

What’s the surprise?  There are surprise power foods in this tasty treat, such as chia seeds and Maca (which makes it a fertility smoothie).  Not only is it good for you, but you can add as much honey as your little heart desires to make it sweeter!


It was so good (to me) that I had to write down the recipe, especially considering my lack to write down many recipes that I have created and use over the years.  Thank you for being an instrumental part of helping me be resourceful with my experiences (trial and error) in the kitchen.  Now I will have no excuse not to document my recipes.

This recipe takes less than 10 minutes and is a quick addition to your daily breakfast, you can also add protein to it to gain more body fat for those in need of gaining weight or trying to build muscle.


Blueberry Surprise Smoothie
A refreshing fertility smoothie with unexpected super foods.
Write a review
  1. 2 cups coconut milk
  2. 3 tbsp honey (or 2 tbsp, not as sweet)
  3. 1/2 cup frozen blueberries
  4. 1/2 cup frozen strawberries (or 1 handful)
  5. 1 tbsp chia seeds
  6. 1/2 tsp Maca extreme (or one day's serving)
  1. Blend all ingredients and place in a glass jar or cup to complete within a day. Remember, the Maca makes it a fertility smoothie. This can also be done without Maca as a basic smoothie.
